Chef CollinBrown, an award-winning culinary artist and restauranteur, is the recipient of several prestigious
awards most notably the 'Caribbean Chef of the Year".
An award he won for two consecutive years - 2005/06 and 2006/07.
Originally from Trelawny, Jamaica Collin opened the first Chef Collin Brown - Quality Caribbean Cuisine restaurant in the trendy East End of London in 2009 and quickly followed with a second one in Bratislava. They are considered the finest for Caribbean food in the United Kingdom, and were awarded with the AA rosette - the only Caribbean Restaurants in the world to be so honored.
Chef Brown creates a fusion between Caribbean and European cuisine, paying great attention to detail in the composition of his dishes. His menus are a celebration of tropical flavours both classic and new
- bringing together the contemporary and the traditional for a unique experience.
Born in 1972 - Chef Brown started cooking at the age of eight and became a professional Seafood Chef by the time he was sixteen. He then moved to the
Cayman Island where he studied the art of fine dining
but, as creative and eager to learn more and forever passionate about food, he decided to move to London to study European cuisine.
He recently returned to Jamaica where he opened the third in his chain of self-titled restaurants at The Devon House, Devonshire in Kingston.
Oral McNarrin Executive Chef Chef Oral Robert McNarrin, affectionately known as Oral, began his culinary journey at the tender age of 18, nurturing dreams of one day becoming a top chef. His passion for his art along with an amazing curiosity for fresh ingredients and how they combine to create exciting flavors has helped propel Oral on the path to becoming one of Jamaica’s top Chefs.
Born in the district of Summer Hill in the parish of Saint James, Oral began cooking from a very young age. Working alongside his mother in the kitchen, he began honing his skills in Jamaica Cuisine. After graduating school in 1985, he immediately began pursuing his culinary dreams, landing his first job at the Marguerite’s by the Sea Restaurant as a kitchen steward and was quickly promoted to range cook. He soon moved on to the world renowned Tryall Golf and Spa, and Sandals Resort in Jamaica.
Chef McNarrin then decided to travel to the US where he worked with various hotels and the Apollo Cruise Line expanding his culinary skills in various international cuisines.
Upon his return to Jamaica, armed with a wealth of knowledge, he applied to the prestigious 5 Diamond Ritz-Carlton Hotel and was assigned to their Banquet Division, where, over the next ten years, he consistently delivered creative delicious meals for the Ritz Carlton many functions.
In 2007 Chef McNarrin won the Ritz 5-Star award. In 2010 he was again awarded a 5-Star, as well as the prestigious top Chef de Partie . In 2012, he represented the Ritz-Carlton Rose Hall in Beijing China for Jamaica’s 50th celebrations.
This HACCP certified chef takes cooking and his job extremely serious. Working with the Ritz-Carlton has given him a wealth opportunity to explore all aspects of the culinary realms and takes time out to encourage others in this field.
